- 1 cup oil
- 1 cup sugar
- 3 eggs
- 1 1/2cup flour
- Pinch of salt
- 1 tsp bicarb
- 1 tsp ground cinnamon
- 2 cups grated carrots
- 1 cup chopped pecans
Beat oil sugar and eggs until creamy (10mins).
Sift flour salt bicarb and cinnamon and fold into egg mixture.
Add carrots and pecans and mix well.
Bake @ 180…
Can use for cupcakes as well (flop proof)…
