Woolies Ciabatta rolls lighty buttered and toasted
Lay on a grilled piece of chicken fillet.
I marinated mine with lemon juice, olive oil, salt and pepper, garlic, green chiilie and Italian seasoning.
Fry in a non stick pan.
Top with lettuce, grilled red pepper.
For the grilled red pepper I deseed the pepper and put over an open gas flame until pepper is blackened and soft. Quickly transfer to a dish and cover with glad wrap. Allow it to sweat and then remove chargrilled skin. Pepper is now sweet and delicious. For the sauce mix equal amounts of basil pesto with double-thick Greek yoghurt. Spread it on. Stack up and enjoy.
