Chocolate chip almond biscuit

Ingredients
2 cups flour
2/3 cup sugar
1 tsp baking powder
¼ tsp salt
2 tblsp coco powder
4 large eggs
1 tsp vanilla essence
1 cup almonds (chopped)
½ cup chocolate chips
1 egg lightly beaten

Method

  1. Combine flour, sugar, baking powdere, salt and coco powder in a large mixing bowl
  2. Beat eggs and essence lightly add to flour mix well
  3. Add almonds and chocolate chips and mix to a soft dough
  4. Knead dough lightly onto a floured surface and divide in half
  5. Wet hands with warm water and form each half into a log about 30cm long and 4cm wide.
  6. Transfer logs to a well greased baking sheet
  7. Bake at 180 for about 30 minutes until done
  8. Cool for 10 minutes and cut on the diagonal into 1cm thick slices.
  9. place back on to baking sheet and bake at 120 for about 1 ½ hours until dry and crisp.
