Ingredients
2 cups flour
2/3 cup sugar
1 tsp baking powder
¼ tsp salt
2 tblsp coco powder
4 large eggs
1 tsp vanilla essence
1 cup almonds (chopped)
½ cup chocolate chips
1 egg lightly beaten
Method
- Combine flour, sugar, baking powdere, salt and coco powder in a large mixing bowl
- Beat eggs and essence lightly add to flour mix well
- Add almonds and chocolate chips and mix to a soft dough
- Knead dough lightly onto a floured surface and divide in half
- Wet hands with warm water and form each half into a log about 30cm long and 4cm wide.
- Transfer logs to a well greased baking sheet
- Bake at 180 for about 30 minutes until done
- Cool for 10 minutes and cut on the diagonal into 1cm thick slices.
- place back on to baking sheet and bake at 120 for about 1 ½ hours until dry and crisp.
