250g butter/margarine
1 cup sugar
1 tsp vanilla essence
1 tsp almond essence
2 cups coconut
Approximately 4 cups flour
1 tsp baking powder
3 tsp elachie powder
2 eggs
Sugar and glace cherries for decorating
METHOD
Cream butter and sugar well.
Add eggs, vanilla and almond essence.
Add coconut, elachi and baking powder and mix again.
Add flour to make soft dough.
Roll out and scrape its surface with a fork to create a rough texture.
Cut with shape cutters of choice. Dip in sugar before placing on a baking tray. Decorate each biscuit with a cut piece of glace cherry.
Bake on 180 until done.
