Ingredients
6oz Butter
1 ½ cups sugar
1 egg
3 tblsps dry ginger
2 tblsps Apricot Jam
3 cups flour
3 cups coconut
2 tsps bicarb )Mix together then add
2 tblsps hot milk )
Method
1. Beat the butter & sugar together
2. Add the egg then the jam coconut & ginger and the flour
3. Lastly add the bicarb and the milk mixture
4. Roll into balls place on a baking try
5. Sprinkle with sugar and bake
