Coconut pudding

(Serves 4 TO 6)

50 g butter or margarine
250 ml white sugar
3 extra large eggs
5 ml vanilla essence
250 ml Snow flake self raising flour
3 ml baking powder
1 ml salt
250 ml milk
250 ml desiccated coconut

1. Beat butter and sugar together. Add eggs and vanilla essence and beat well.
2. Sift dry and add , with milk coconut and mix well. Add milk and coconut.
3. Pour into tart dish and bake in a preheated oven at 180 degree cel for about 45 minutes until golden brown. Serve with custard or cream.
