Ingredients:
90g butter
1/3 cup castor sugar
2 tsp dry instant coffee
1 tsp hot water
2 egg yolks
1 ½ cup plain flour
Icing sugar
Date filling:
¾ cup chopped dates
1/3 cup water
1 Tbsp orange juice (optional)
¾ cup almonds
Method:
1. beat butter and sugar until light and fluffy.
2. Beat in combined coffee and water.
3. Add egg yolks, beat until combined.
4. Stir in sifted flour, knead dough on lightly floured surface until smooth; cover and refrigerate for 30 mins.
5. Roll out dough into a rectangular +- 20 x30 cm between sheets of plastic.
6. Spread evenly with cold filling.
7. Roll dough like swiss roll.
8. Cover, refrigerate for30 mins.
9. Cut dough into 3mm slices
10. Place into oven trays about 3 cm apart.
11. Bake at 160° for about 12 mins, or until lightly browned.
12. Stand for 5 mins, before lifting onto wire rack to cool.
13. Dust with icing sugar.
Method:
Combine dates, water and juice in pan, bring to boil, simmer uncovered, for about 15 min or until mixture is thick and pulpy, blend or process mixture until smooth. Stir in nuts, nuts.
