¼ cup olive oil
2 cups almonds, sliced
2 Tbsp sesame seeds
2 tsp crushed red chillies
1 tsp salt
2 cups cucumber, sliced
2 cups pineapple, chopped
¼ cup red pepper , julienne
½ cup dates, chopped
¼ cup feta cheese, cubed
1 pkt ready washed mixed lettuce
½ cup Kraft mayonnaise
¼ cup mustard sauce
1 Tbsp brown sugar
2 Tbsp soya sauce
½ tsp salt
Freshly ground pepper.
Heat oil, fry almonds and sesame seeds until light pink.
Strain almonds and sesame and sesame seed mixture and leave oil to cool.
Place almonds mixture on a tray and sprinkle crushed chillies and salt over.
Mix all the dressing ingredients together add the left over olive oil used for frying almonds
Combine cucumber, pineapple, pepper, dates, and feta cheese.
Tear lettuce into pieces and mix with other salad ingredients.
Pour dressing over the vegetables and mix well.
Pile the salad on a platter.
Cover salad with fried almonds 7 sesame seed mixture.
It is important that you assemble this salad just before serving.
