Date and Carrot Muffins

These date and carrot muffins take about 8 minutes to put together and 20 minutes to bake. Ready to be packed in lunch boxes or as a breakfast on the go or for a Sehri treat

1 cup oats
1 cup flour
1/2 cup sugar. I used less because of the dates. Sweetener can be used
2 tsp cinnamon powder
1/4 tsp salt
1 tsp baking soda
1 egg
1 cup milk
1/2 cup dates chopped
1 cup grated carrot
1/4 cup chopped nuts if you wish
1 tsp vanilla essence
1/4 cup oil

Mix all dry ingredients together. Add the dates and carrot and mix well. It should not clump together. Beat the wet ingredients together and add in. Mix but don’t over mix. Bake at 180ºC for 20 to 25 minutes or until done. Can be frozen once cooled. Defrost and heat for 15 to 30 seconds in the microwave. Enjoy
