2 eggs
1 ½ cup chopped dates
½ cup sugar
½ cup castor sugar
½ cup cake fruit mix
1 tsp vanilla essence
1 cup chopped nuts
¾ cup cake flour
1 level tsp baking powder
½ tsp mixed spice (for cakes)
Method:
Beat eggs and vanilla in electric mixer until stiff, add in the sugar bit by bit until is dissolved. Sift cake flour and baking powder, add in the cake mix, nuts salt, dates and spice and mix well. Fold this fruit mixture into the eggs mixture. Mix well, spread into greased oven tray 19cm x 19cm. Bake at 180C for 25 – 30 minutes until brown
