Date and Walnut Cake (22.04.2010)


 

 

Ingredients:

 

250g butter

250g sugar

250g Walnuts or pecan nuts

250g dates

4 eggs

1 tsp vanilla essence

1 tsp cinnamon powder

1 cup boiling milk

3 level tsp bicarbonate of soda

1 level tsp baking powder

2 cups flour

 

Method:

Chop nuts and dates. Beat butter and sugar well in mixer. Add eggs one at a time. Stir in vanilla, cinnamon, nut, dates and sifted flour. Boil milk in large container. When boiled add the bicarbonate of soda. The bicarb will froth. Add baking powder to the flour mixture thereafter fold in the milk mixture. Greese 2 medium loaf pans or 1 deep 23cm square cake pan. Pour mixture into prepared pan. Bake in moderate oven for about an hour. Let it stand for 5 minutes before turning on to a wire rack to cool. Dust icing sugar order cake.
