You will need 1 cucumber Cream cheese and dates
Start by chopping off the ends of your cucumber. And slicing them length wise with a potato peeler. So, you get these thin ribbons. Cut them across so you get two ribbons.
Place them flat onto your surface. Apply about a tsp of cream cheese to the bottom of the cucumber ribbon, I usually put it into a piping bag, so it’s more controlled and neater.
Cut your dated in half, and add one of the halves onto your cream cheese.
Roll up your cucumber into these tiny scrolls. You can use a toothpick to hold it together. Otherwise, it may just hold since the cucumber is slightly wet. You can sprinkle on some of my salad sprinkle if you’d like an extra crunch.
