DATE SHORTIES
INGREDIENTS:
170g self-raising flour
170g stoned dates
170g butter
85g custor sugar
1 tablespoon honey
½ level teaspoon ground cinnamon
2 tablespoons cold water
1 tablespoon lemon juice
METHOD:
Grease a Swiss roll tin. Sieve flour and semolina.
Melt butter over gentle heat and add sugar. When the sugar is dissolved, stir in flour and semolina. Mix well.
Spread half this mixture in the tin and press down well.
Mix chopped dates, honey, spice, and water and lemon juice in a pan. Heat, stirring until smooth.
Spread this over mixture over the top
Press lightly and bake in a moderate oven.
Cut into squares at once, but remove only when cool.
