125g butter or margarine
½ cup sugar
2 extra large eggs
2 ¼ cup cake flour
1ml salt
2 tsp baking powder
½ tsp bicarbonate of soda
150g fruit cake mix
½ cup milk
Method:
Heat butter and sugar. Add eggs and beat until light and fluffy. Sift dry ingredients and add to egg mix. Add fruit. Whisk sour milk and milk together and mix well into dry mix. Spoon into well greased 23cm loaf tin and bake in a preheated oven at 180 for 55 TO 60 minutes. Cool off slightly in tin before turning out onto wire rack. This recipe makes 1 loaf.
Tip:
Subsitute sour milk with ¾ cup milk and 2 Tbsp lemon juice or vinegar.
