125g butter or margarine
½ cup sugar
2 extra large eggs
2 ¼ cups cake flour
1ml salt
2 tsp baking powder
½ tsp bicarbonate of soda
150g fruit cake mix
1 cup sour milk
½ cup milk
Method:
Beat butter and sugar. Add egg at a time and beat until light and fluffy. Sift dry ingredients and add to egg mix. Add fruit. Whisk sour milk and milk together and mix. Spoon into well greased 23cm loaf and bake in a preheated oven at 180 degrees for 55 – 60 minutes. Cool off slightly in tin before turning out onto wire rack. This recipe makes 1 loaf
