Fresh Vegetable Soup (02.09.08)


Ingredients:

 

2 Tablespoon oil

2 Teaspoon garlic, crushed

1 Cup chicken fillet, finely cubed

1 Large tomato, grated

1 Med potato, cubed

1 Large carrot, diced

1 Large onion, sliced

½ Cup jungle oats

1 Teaspoon chilli powder

1 Teaspoon coriander & cumin powder

1 Teaspoon salt

½ Teaspoon white pepper

1 Packet lite cup a soup (Summer Vegetables)

2 Teaspoon parsley, chopped

 

Method:

 

Heat oil, fry the garlic for one minute and then add the meat.

Braise meat for two minutes and add all the vegetables and spices except for lite soup.

Add 2 litres of water and simmer until about 1 ¼ litre of broth remains.

Remove from heat and leave to cool. Liquidize the mixture and bring to the boil.

Follow instructions on packet and add to soup.

Mix well and garnish with parsley. Add more salt if required.
