Pastry
250g flour
60g caster sugar
125g cold milk
1 egg
Filling:
60g dried Turkish apricots
40g dates
75g chopped almonds or pecan nuts
50g sultanas
1 tbsp honey
1 tbsp orange juice
1 egg yolk
Method:
Sift flour and sugar on to work surface. Make a well in the centre and drop in the eggs and cut in the butter. Work into smooth dough. Wrap in plastic and chill for an hour. Cut apricots and dates into small pieces. Combine with dates and nuts. Roll out the pastry on floured board. Brush heated honey over pastry and sprinkle filling all over. Drizzle with orange juice. Roll pastry into a swiss roll and cut the edges. Seal and place on baking sheet. Brush with egg yolk and bake at 200 degrees for 40-45 minutes. Cool and then slice thinly
