Ingredients
125 g Butter
1 tblsp golden syrup
1 ¼ cups flour
1 tsp baking powder
1 cup chopped wealnuts
1 cup desiccated coconut 1 cup raisins
1 cup white sugar
1 egg
Icing sugar
Method
- Melt butter and golden syrup in a saucepan large enough to mix all the ingredients
- Remove from heat.
- Sift flour and baking powder into the saucepan
- Stir in coconut walnuts raisins and sugar
- Lightly beat the egg
- Add to saucepan mixing until well combined
- Press into greased swiss roll tin
- Bake at 180 c for 20 mins or until golden
- When cold dust with sifted icing sugar
