Ingredients :
1 ¼ cups flour
3 tsp castor sugar
1 tsp baking powder
salt
2 egg yolks
iced water
70g butter
½ cup smooth apricot jam
Filling :
2 egg whites
½ cup castor sugar
1 cup coconut
Method :
– Add egg yolks and enough iced water to make a dough.
– Refrigerate dough for 30 minutes.
– Roll out and cut into rounds with a biscuit cutter.
– Place in greased patty pans.
– Put a little jam on each one and cover with a teaspoonful of the filling.
– Bake in a moderate oven for 15 to 20 minutes.
Filling: whisk egg whites until stiff. Add castor sugar and coconut. Mix well.
