Ingredients :
500g plain fruit cake mix
250g dates pitted and cut into pieces
250g butter
1 cup Hullets brown sugar
Method :
Cut butter into fruit and date mixture and then add sugar and 1 level teaspoon bicarbonate of soda. Add 1 cup boiling water to the above mixture. Mix well with wooden spoon. (This allows for the butter to melt and soften)
Beat 4 eggs and 1 teaspoon caramel essence. Add this to the above mixture. Sift 2 ½ cups of flour; 1-heaped teaspoon baking powder and Heaped teaspoon mix spice. Add to mixture. Add 100g cherries and any nuts walnuts, stripped almonds or pecan nuts. Pour mixture into 2 loaf tins and bake at 160 degrees for 1¼ hours.
