1 medium sized potato boiled, mashed and cooled
1 large egg
¼ cup oil
3 ¼ cup warm milk
4 cups cake flour
¼ cup brown sugar
10g instant dry yeast
1 Tbsp cinnamon powder
1 Tbsp mixed spice
1 Tbsp ginger powder
Syrup
2 ¼ cups water
4 cups sugar
½ tsp lemon juice
2 sticks cinnamon
Piece of ginger
Mix dry ingredients and form a soft dough. Beat egg and mashed potato together set aside. Combine oil, warm milk, and warm water together. Combine the dry ingredients (including the yeast). Knead for +- 10 min to smoothen the dough. Leave rise is sealed oiled dish in a warm place until double its original size. When risen roll into thick long sausage like roll. Cut into equally sized portions. Press the ends and stretch slightly. Leave on a floured surface to rise once more for 20 minutes. Fry in deep oil on medium heat till well risen and browned. For the syrup: boil the syrup ingredients together on medium heat till it becomes slightly sticky. Dip the koeksisters in hot syrup and sprinkle coconut.
