Ingredients :
125g butter
½ cup castor sugar
3 eggs separated
1 tsp vanilla essence
1 cup flour
1 ½ tsp baking powder
1 ½ tsp cocoa
½ cup milk
Filling :
3 egg whites
½ cup icing sugar
1 ¼ cups desiccated coconut
Method :
Beat butter and sugar until light and fluffy. Add egg yolks and beat well. Sift flour, baking powder and cocoa together and add alternately with milk. Put half the cake mixture in a greased tin, spread filling on top and place the remaining cake mixture on top of the filling. Bake in a moderate oven until cooked through. Filling: beat egg whites until stiff, fold in icing sugar and coconut.
