INGREDIENTS CAKE
: 125g BUTTER
½ CUP CASTOR SUGAR
3 EGG YOLKS
½ TSP VANILLA ESSENCE
1 CUP FLOUR
1 ½ TSP BAKING POWDER
1 ¼ TBLSP COCOA
¾ CUP MILK.
FILLING –
3 EGG WHITES
½ CUP ICING SUGAR
1 ¼ CUPS DESSICATED COCONUT
METHOD –
CAKE
1.BEAT TOGETHER BUTTER AND SUGAR UNTIL LIGHT AND FLUFFY
2.ADD EGG YOLKS, VANIILA ESSENCE AND BEAT WELL
3.ADD SIFTED DRY INGREDIENTS AND MILK AND MIX WELL. FILLING 1.BEAT EGG WHITES UNTIL STIFF 2.ADD ICING SUGAR AND COCONUT AND MIX WELL.
3.POUR 2/3 OF CAKE BATTER INTO A GREASED 20cm CAKE TIN, ADD THE COCONUT FILLING AND TOP WITH THE REMAINING CAKE BATTER.
4.BAKE AT 180c FOR 30 -40 MINUTES. 5.WHEN COOL ICE WITH CHOCALATE ICING.
