Ingredients
60G Margarine
1 Cup Flour
1 Cup Milk
1 tsp apricot jam
1 tsp Bicarb
½ Cup sugar
2 tsps vinegar
1 tsp baking powder
1 Egg
Salt to Taste
Sauce
1 cup Sugar
½ Cup Butter
½ Cup Boiling Water
1 Cup Ideal Milk
Method
1. Beat the egg and sugar well, cream in the butter
2. Mix the Bicarb and milk together and set aside.
3. Blend all other ingredients into the butter mixture and add the milk and blend well.
4. Turn batter into a greased oven tray and bake for 40/60 minutes till skewer inserted comes out clean.
Sauce
Mix all ingredients together over a low heat, Pour warm sauce over the hop pudding, pricking the pudding with a skewer to absorb the sauce.
