10 – 12 marrows
Salt
Pepper
Butter
1kg chicken fillet
Cheddar cheese
Lemon juice
Method:
Cut the marrows into slices, Cook with salt, pepper and butter. Cook the chicken cubes with salt, pepper and lemon juice. When cooked place marrows at the bottom of a pyrex dish. Then add chicken pieces. Finally top with sauce and bake. Add grated cheese on top.
White Sauce:
4 Tbsp butter
4 Tbsp flour
1-2 cups milk
Salt and pepper
Method:
Melt butter and flour, cook on a low heat (don’t let it colour). Gradually add milk, mixing very well to give a smooth consistency. Bring to the boil. Cook for 5 minutes and add seasoning.
