Ingredients :
4 eggs
¾ cup castor sugar
1 cup flour
2 tsp baking powder
pinch of salt
2 tbsp milk
2 tbsp water
2 tbsp butter
2 cups coconut roasted
Method :
– Grease a cake tin and set aside.
– Sift flour, baking powder and salt.
– Beat eggs and castor sugar until fluffy.
– Bring the milk, water and butter to a boil.
– Fold in the dry ingredients to the egg mixture and lastly add the boiling mixture.
– Fold in till well blended and pour into the prepared pan.
– Bake in a moderate oven for 15 – 20 minutes.
– When cool, cut into squares and coat with mock cream.
– Roll in coconut.
