Milk tart

Ingredients
Base:
60g Butter or Margarine
125ml Sugar
250ml Cake Flour
Pinch Salt
5ml Baking powder
1 egg

Method
1. Cream butter and sugar until light and fluffly
2. Add remaining ingredients and mix to form a soft pastry.
3. Press Pastry into a large pie plate and bake at 180 for 20 minutes until straw coloured.

Ingredients
Filling:
500ml Milk
2 eggs
60ml Sugar
Pinch Salt
15ml Corn Flour
15ml Cake Flour
15ml Butter or Margarine

Method
1. Bring milk to the boil
2. Beat eggs, sugar,cake flour,corn flour,and salt and add to boiling milk and stir.
3. NB. THIS MIXTURE THICKENS QUICKLY. Once it has thickened remove from heat and beat in the butter.
4. Pour mixture in pie shell and sprinkle with cinnamon. Allow to cool, refrigerate and serve cold.
