3 eggs
1 cup sugar
½ cup flour
Pinch of salt
1 tsp cinnamon
2 cups finely carrots
1 cup chopped pecan nuts
1 tsp bicarbonate of soda
Butter icing
Tinted with coloured powders
Beat oil sugar and eggs until creamy. Add flour , soda, salt and cinnamon and add it to the egg mixture.
Add carrots and pecan nuts and mix well. Spoon butter evenly into a well greased loaf tins, (squared or rectangle)
Bake at 180 C for 25 minutes until done and cool company.Decorate.
