Ingredients
3 cups fruit cake mix
¼ cup sugar (brown)
125gr butter
1 ½ cups water
1 tsp bi-carb
2 cups flour
2 eggs
1 heaped tsp baking powder
Method
- Place the fruit, sugar, butter, water and bi-carb in a saucepan and allow the mixture to boil gently for 25 minutes, stirring well.
- Remove from heat and leave till luke warm.
- Add flour, egg and baking powder.
- Blend thoroughly .
- Place mixture in a well greased baking tin and bake for 1 or 1 ¼ hours.
- Allow to cool in pan
- You bake it in 3 to 4 foil containers which are well greased. Then bake for shorter period of time
