4 cups Flour
1 teaspoon Cream of Tartar
1 teaspoon Baking Powder
¼ lb Butter (divide 1 lb into 4 parts and use 1 part)
1 ½ – 1 ¾ cup iced water, mix with 1 tablespoon White Vinegar to make pastry dough.
Method
1. Mix flour, cream of tartar and baking powder together.Grate butter into flour mixture and rub with fingertips until it resembles crumbs. Make dough with water and vinegar mixture. Leave to rest for about 1 hour in the refrigerator. Divide dough into four parts. Roll each out, the size of a rotileave in fridge.Grate 1 part butter on 1 roti and sprinkle maziena. Cover with 2nd roti and repeat procedure until all rotis and butter are used up. Roll out once more – fold and put in plastic bag and refrigerate overnight before use. This Pastry Dough can be used for pies as well as tarts.
