Ingredients :
3 tblsp flour
3 tblsp sugar
½ cup pineapple syrup
1 tsp grated lemon rind
2 tblsp lemon juice
3 beaten egg yolks
½ cup milk
1 ½ tblsp melted butter
3 egg whites
1 ½ cups drained crushed pineapple
Method :
– Preheat oven to 350 F
– Combine and stir all the above ingredients except the egg whites and pineapple
– Whip the egg whites until stiff and fold them into the mixture.
– Place the crushed pineapple at the bottom of a buttered ovenproof dish. Pour the custard mixture over the fruit.
– Place the baking dish on a rack in a pan hot water.
– Bake the custard for about 50 minutes. Serve hot or cold.
