2 cups flour
1 cup butter
1 ¼ cup castor sugar
2 tsp baking baking powder
½ tsp salt
1/3 poppy seeds
4 Tbsp lemon juice1 ½ Tbsp grated rind of 2 lemon
¼ cup water
Syrup:
1 cup sugar
½ water
½ cup lemon juice
Method:
Beat butter and sugar till light and creamy. Add lemon rind, 1 egg at a time and beat till well blended. Sift in flour, baking powder and salt twice, then add poppy seeds. Mix together the water and lemon juice. Alternately add the flour mixture and lemon/ water to egg mixture till all is well blended. Grease a ring pan well pour mixture into pan and bake 180° for 40 minutes. The cake is very soft to be careful when removing it from the pan.
