250g butter
200g (1 cup) sugar
1 egg
30ml (2 Tbsp) oil
5ml (1 tsp) vanilla essence
500g (4 cups) cake flour
5ml ( 1 tsp) baking powder
Pinch salt
250g chopped dates
1 heaped tsp, elachi ground
1 heaped Tbsp, ground cinnamon
125ml (½ cup) chopped walnuts / pean
250ml (1 cup) post toasties
Method:
Cream butter and sugar. Add the oil and essence and mix. Sift flour and baking powder and add salt, chopped dates and ground spices. Mix together creamed – mixture and dry ingredients until mixture has a crumbly texture. Add the egg and mix to form firm dough. Roll dough and sprinkle surface with some chopped walnuts and post toasties. Press lightly down into dough with rolling pin. Cut our rounds and place on baking tray. Bake at 180C for 15-20 minutes or until done.
