1 tbsp grated orange rind
250 g butter
¾ cup castor sugar
2 eggs
1 cup dates soaked
½ cup pumpkin cooked and cooled
½ cup coconut
2 cups self-raising flour
½ cup milk
Method :
Cream butter, sugar and rind until light and fluffy. Add eggs one by one until just mixed. Change to large bowl and stir in pumpkin, coconut and dates. Add half flour and half milk, and then the remainder. Bake at 160 degrees for 1 ¼ hours.
