1 ½ CUPS CASTOR SUGAR
5 EGGS
3 CUPS FLOUR
5 TSPS BAKING POWDER
1 CUP MILK
1 TSP VANILLA ESSENCE
METHOD
1.SIFT TOGETHER FLOUR AND BAKING POWDER 3 TIMES
2.BEAT BUTTER AND CASTOR SUGAR UNTIL LIGHT AND FLUFFY
3.BEAT IN EGGS ONE AT A TIME
4.ADD FLOUR AND ALTERNATE WITH MILK AND VANILLA ESSENCE
5.GREASE CUP CAKE PANS AND POUR IN BATTER AND BAKE ON 180c UNTIL DONE.
6.WHEN DONE DIP IN SYRUP AND ROLL IN COCONUT.
SYRUP FOR RED CAKES
BOIL TOGETHER:
1 ½ CUPS ICING SUGAR
2 oz BUTTER
1 ½ TSP VANILLA ESSENCE
RED COLOURING
1 CUP BOILING WATER
BOIL THIS MIXTURE UNTIL IT IS A BIT THICK, AND THEN DIP CUP CAKES IN SYRUP AND ROLL IN COCONUT.
