Ingredients:
2 cups cake flour
½ tsp salt
1 tsp yeast
1 Tbsp oil
2 tsp sugar
Enough warm water to make a dough
Method:
Mix all the ingredients and make a dough with water. Allow to rise until double in size. Then divide dough into 8 parts. Roll out each into medium size roti, leave on cloth to rise for 10 minutes, then cook like roti but do not brown it too much. Lay out roti, plae filling in centre, add a little coleslaw, chilli sauce and also chips if desired. Fold into a roll and secure with a tooth pick or wrap in cling wrap. Make 8
Chicken Filling:
500g chicken strips
3 Tbsp vinegar
1tsp garlic
1 Tbsp Mayonaise
1 ½ tsp salt
1 tsp paprika
1 tsp red chilli powder
1 Tbsp oil
1 Tbsp tomato sauce
Mix everything and cook until done.
Coleslaw
½ medium cabbage shredded finely
4 Tbsp mayonnaise
1 carrot grated
Pinch of salt
Pinch of black pepper
Mix everything together and keep in fridge
