Ingredients
2-3 cups cooked chicken (roast or pan fried), shredded or sliced)
2 tbsp olive oil
1-2 cloves garlic, finely chopped
(or go easy on garlic in Ramadaan)
1 heaped tsp ground cumin
1 heaped tsp paprika (smoked if available)
Salt and cracked black pepper to taste
4-6 soft wraps or tortillas
Yoghurt Sauce
1 cup plain Greek style yoghurt
1 tbsp lemon juice
Salt to taste
Optional: chopped cucumber or fresh herbs ( I prefer a combination of mint and dill)
Add a To Serve
Lettuce, tomato, cucumber or grated carrot
Method:
Heat olive oil in a pan and gently saute the garlic until fragrant. Add the cumin, stir and fry
Then add the cooked chicken, and paprika. Season lightly and warm through about 3-4 minutes.
Mix all the yoghurt sauce ingredients in a bowl and set aside. Warm the wraps, fill with spiced chicken, add salad and drizzle with yoghurt sauce. Roll up and serve immediately.
