Ingredients:
4 large ripe tomatoes
2 Tbsp ghee or oil
1 small onion, finely chopped
Spices:
1 tsp finely chopped fresh ginger
1 fresh green chilli, seeded & chopped
2 Tbsp chopped fresh coriander
Salt & freshly ground pepper to taste
Method:
Grill whole tomatoes over gas flame or under electric griller until skins wrinkle. P eel & chop.
Heat ghee or oil in a sauce pan or karahi & fry the onion & ginger until golden.
Add tomatoes & remaining ingredients.
Cover & cook until the tomatoes are a thick pulp & most of the liquid evaporates.
Serve with rice or chapattis.
