Macerated strawberries
1 punnet fresh strawberries cut & washed
Add to a bowl with half cup of sugar
Allow to sit for 20 minutes
Mascarpone cream
1 tub mascarpone cheese
300 ml fresh cream
1 tsp vanilla essence
Half cup icing sugar
1 packet boudoir biscuits
Milk for dipping
Sliced strawberries
Pistachios for decoration
Method
Add the cut strawberries into your blender and blend until smooth. Add a dash of fresh lemon juice. Lightly whip the cream ingredients until it reaches soft peaks. Dip each biscuit into milk and place into your dessert bowl. Spoon the macerated strawberries. Pipe the creamy mixture then add sliced strawberries, and continue to layer until the mix is finished. Decorate with pistachios. Enjoy
