sugar beans can be boiled in a pressure cooker
ingredients:
1 large onion chopped
1 tsp whole jeero seeds
1 tsp whole mustard seeds
1 tsp ginger garlic masala
a few curry leaves
3 green chillies that has been slit
2 cups liquidised tomatoe
2 tblsp tomatoe puree
1 tsp salt or to taste
1 tsp turmeric
2 tsp dhania powder
1 tsp jeera powder
2 tsp red chillie powder
1 tsp crushed red chillies
1 potatoe – cut into 4 pieces – optional
2 tblsp aamli juice – optional
Method
In a pot braise together chopped onions, jeero seeds, ginger garlic masala, mustard seeds, curry leaves and green chillies in a little oil. Once onions are braised add liquidised tomatoes with the balance of the spices. Allow simmering for 5 minutes then add boiled sugar beans. Add 2 cups water and cut up potatoes and allow to cook on low for about 15 to 20 minutes or until gravy is a bit thick. Lastly, add tomato puree and cook for another 5 minutes You may add 2 tblsp of aamli juice to the sugar beans.
