2 cups flour
½ cup mealie meal
2 tablespoon baking powder
2 eggs
1 cup milk
¼ cup melted margarine
1cup drained corn kernels (not creamed variety)
METHOD:
Sift together, flour, sugar and baking powder. Add mealie meal. In the bowl, beat together melted margarine, milk and eggs. Pour this on to dry ingredients and blend well. Lastly, fold in corn. Bake in a muffin tin for about 30 minutes at about 220deg c.
