Spring rolls with a difference
½ kg chicken fillet
1 punnet mushrooms
1 250ml fresh cream
1 tsp salt
1 tsp black pepper
1 tsp green masala
Parsley
1 box phyllo pastry
Cube chicken, add ghee, salt, pepper and green masala. Cook for a while when almost done add mushrroms and let water burn out, then add fresh cream and leave to cook until dry. Add parsley and fill spring rolls.
Rockets
1 kg chicken fillet
To chicken add..
Salt
Green chillies
2 tblsp crushed garlic
1 tsp jeeru
½ tsp black pepper
½ tsp lemon pepper
Cubed green pepper
Cook on low heat, when done add a tin of creamstyle sweetcorn and leave to cook, when cooked leave to cool and add the following.
1 cup grated tussers cheese
1 cup grated mozarella cheese
1 cup grated gouda cheese
Mix cheeses with chicken mixture, fill samoosa pur with this mixture and shape like rocket using lai, make sure edges are sealed, dip in egg and breadcrumbs.
Calzones
4 cups flour
2 tblsp butter
2 tblsp sugar
1 tsp salt
1 pkt yeast
Mix everything together and make dough with warm water, when kneading dip hands in oil and knead well. Leave dough to rest and rise in double its size. Roll out small rounds, fill with filling, close, brush egg, sprinkle parsley and bake on 180 till done.
Filling
Chop 1 onion and braise in ghee. Add 1 kg chopped chicken fillet, add red masala, green masala, 1 tbl pepperdew paste, salt, pepper, chicken spice, lemon pepper add chopped 1/4 red, green and yellow pepper. Cook till done but not dry…before serving add chilli sauce, cheese and chopped pepperdew.
