A collection of chops recipes (27.08.15)

Salt and pepper chops

Make vagaar with 1 onion (light brown)
Take a kg cleaned and washed chops and add to vagaar, add 3 tbl garlic or garlic flakes, 1 tsp salt, 1 tsp black pepper, fresh whole green chillies, add 1 tsp red chillies, when half way done, add 3/4 cup fresh cream. Add greens and serve with steamed veggies

Savoury chops

1 kg lamb chops
1 tsp red ginger/garlic masala
1/4 cup lemon juice
1 tsp dry dhana
1/2 tsp fine black pepper
1/4 tsp arad
1/4 cup water
Marinate chops with above and cook till done, then make batter with
1 cup self raising flour
1 small onion and tomato (grated)
1 tbl tal
1 egg
1/2 tsp salt
1/2 tsp red chillies
Chopped greens and water as required.
Make batter with above ingr and add enough water to make bajya batter, dip each chop in batter and fry in a non stick pan till golden brown on both sides.

Roast masala

Can be used for steak, chops, chicken, fish and prawns.
1/2 kg whole red chilles, soaked in hot water.
1/2 kg garlic
Drain water from chillies and add 2 cups white vinegar to chillies and leave overnight, next day grind chillies with vinegar, garlic and
1 cup coarse jeeru
1 cup rough salt
1 small tin tomato puree
1 small bottle egg yellow colouring
Mix everything together and masala will be ready to use.

 

Crumb lamb chops
1 kg lamb chops
2 tbl ginger garlic masala
1 tsp jeeru powder
1 tsp dhana powder
1 tsp salt
1 tsp black pepper
1 tsp mustard powder
1 tsp lemon pepper
1 tbl vinegar
1 tbl mayonaise
1 tsp red chillies

Wash and drain chops, then marinate in above mixture, lay evenly in a wide heavy botton pot, cook with half cup water till done, leave to cool…take 1 cup breadcrumbs, 3 eggs and leftover sauce from pot. Coat each chop in crumbs and lay on a tray, sepereate whites from yolks, whisk whites till stiff, add the yolks and leftover sauce and whisk further, dip each crumb chops into egg mixture and fry on meduim heat till golden brown. Enjoy with salad, mash, veggies or chips.
