QUICK AND EASY CUPCAKES:
Ingredients:
3 eggs (I use XL free range)
125g Butter (can use Margarine but I only use butter)
5ml vanilla essence
3/4 cup sugar…
3/4 cup milk
1 1/2 cups flour
3 tsp baking powder
Method:
Add all ingredients except for the baking powder and mix on high speed for 6 minutes.
Add baking powder and beat for 1 minute.
Fill cupcake cases and Bake at 180 degrees Celsius till done. My oven is a thermo fan so it bakes in about 20 minutes.
BOUNTY CAKES
125g butter
1/2 cup castor sugar
3 egg yolks
1 tsp vanilla essence
1 cup flou1 and ½ tsp baking powder
2 Tblsp cocoa
3/4 cup milk
Filling
3 egg whites
Half cup icing sugar
1 n quarter cup coconut
Cream butter and sugar. Add egg yolks and vanilla. Add sifted dry ingredients and milk. For the filling beat egg whites until stiff. Fold in coconut and icing sugar.
Pour half batter into greased pan. Add filling and top with remaining batter. Bake at 180 until done. Decorate as desired.
EASY 2 INGREDIENT PIZZA DOUGH
2 cups self raising flour
3/4 cup yoghurt
I use my Kenwood to make dough but I add a teaspoon of salt and tablespoon butter as well.

SOSATIES
Ingredients
1/2 kg chicken fillet – cubed a bit big.
1tsp salt
1tsp lemon pepper
1 1/2 tsp Portuguese chicken spice
1tsp BBQ spice
1tsp sugar
2tbls Tomato sauce
2 tblsp mayonnaise
2tbls steers peri peri sauce
1tbls steers mustard sauce
2tsp crushed red chillies
2tsp green masala
1tsp garlic flakes
Method
Marinate chicken … thread on skewers with cubed red green and yellow peppers and also onions and tomatoes. Pineapple cubes too if desired
Drizzle with oil or butter when cooking in the oven or grill.
Or even on the braai/ barbecue bin to give that real smokey taste
ICE TEA RECIPE
3 cups boiling water
2 tea bags
Leave to brew (do not boil)
Add ¾ cup roses lime cordial to tea and leave mixture to chill, add sprite, lemon slices and mint and serve
FRUIT GHAAS RECIPE
1 liter milk
1 tsp ghas powder
2 tblsp maizena
2 tblsp custard powder
1 tin nestle cream
1 tin condensed milk
• Boil milk and ghas powder together.
• Make a paste with maizena, custard powder and little water.
• Once milk is boiled add paste and stir continuously until custard thickens.
• Add condensed milk to sweeten, thereafter add nestle cream and mix well.
• Strain custard into a shallow bowl and allow to set.
• When set arrange fruit on top (strawberries, kiwi fruit, oranges etc) can fruit can also be used.
• Make another quantity of ghas with 2 cups water, ½ tsp ghas and 4 tblsp sugar.
• Boil for little while, leave to cool and pour slowly over arranged fruit.
• Leave this to chill in fridge until completely set.
• This will look like a glass on top of the dessert.
