A collection of mutton recipes

SALT AND PEPPER MUTTON
Marinate 1 kg mutton with the following ingredients:
3 tblsp Nandos Pepper Sauce
3 tblsp sour cream
Salt to taste
White pepper
Black pepper
3 tblps green masala
Lemon pepper
Garlic pepper
3 tblsp fresh garlic
2 tblsp lemon juice
2 tblsp vinegar
2 tblsp white onion soup and about 3 tblsp olive oil
Cook till done then add a few blobs of butter -serve with veggies

 

LAHORI CHOPS
1 kg chops
2 tsp ginger garlic paste
1 ½ tsp salt
¼ tsp turmeric
1 tsp crushed red chillies
1 ½ tsp chilli powder
2 tbsp tomato sauce
2 tbsp chilli sauce of your choice
2 tbsp lemon juice
½ tsp steak and chops spice
¼ tsp black pepper
Add all spices to chops and let it marinate for few hours. Heat pot add 2 tab of ghee and add 4 cloves garlic (cut up). Braise till garlic turns pink and throw in chops. Cook until chops are tender.
Stir fry to add to chops:
1 onion
1 green pepper
2 tomatoes
*Cut the above in rings
1 green chillie
1 tsp salt
¼ tsp turmeric
1 tsp chilli powder
Heat frying pan add all the above ingredients and cook in butter until soft.
Dish out chops on platter and then the stir fry on top. Garnish with chopped dhania.

 

MUTTON KHARAI
1kg mutton cut in small pieces
Marinate for 2 hours in
2 tsp red chillies
1 tbls crushed garlic
1 tbls grated ginger
1 tsp salt
2 tbls yoghurt.
Dry roast 1 tblsp poppy seeds and 1 tsp whole jeero in a pan
Slice 1 large onion and fry until golden brown. Drain
In the same oil… Braise..The following
2 grated onion
when onions turn pink add
2 tsp dhana jeero
Arad
Roasted poppy seed and jeero
Braise for 1 minute
Add
1 large chopped tomato
4 tbls yoghurt
Simmer for 5 minutes
Add chopped mint leaves and coriander. Then add marinated mutton, half of the fried onions, with a little water. Close pot and cook till meat is tender.
Before serving add 1 tsp garam masala and simmer.
Garnish with remainder of fried onion, chopped mint leaves and coriander.
Serve with potato wedges and roti or naan
