Burnt sugar pudding
1 ½ cups sugar
3 cups hot water
2 tablespoon butter
Pinch salt
Pudding:
1 ½ cups flour
2 ½ teaspoons baking powder
¼ teaspoon salt
3 tablespoon suger
3 tablespoon butter
½ cup chopped nuts
1 cup milk
1 tin Nestle cream (155g)
Cook sugar until it is melted and golden brown. Then carefully add water,butter and salt,allow to boil slowly and leave aside. Meanwhile mix flour,baking powder,salt and sugar,rub in the butter, then add the nuts and enough milk to make soft dough. Drop spoonfuls into the syrup as for dumpling and allow to simmer. When done allow to cool and serve with cream.
Malva pudding
1 cup flour
1 cup sugar
1 tsp b.powder
1 tsp bicarb.of soda
1 tsp vinegar
1 tsp vanilla
1 tblp apricot jam
1 egg
1 cup milk
Pinch salt
Syrup:
1/4 lb butter
3/4 cup suger
1 cup milk
1/2 cup water
1 tsp vanilla
Method:
1.Beat ingredients for pudding together.
2.Bake at 180 degrees for approx.40 minutes.
3.Boil syrup ingredients together.
4.Use fork to poke holes in pudding.
5.Pour syrup over pudding while still hot.
6.Serve with nestle cream.
Date pudding:
1 cup boiling water
1 cup chopped dates
1/2 cup flour
1 teaspoon bicarbonate of soda
Pinch of salt
1 tablespoon butter
1 teaspoon vanilla essence
1 cup chopped nuts
1 egg
1 cup sugar
1 tin Nestle cream (155g)
Mix water and dates and leave to cool.sift flour, bicarbonate of soda and salt, rub in butter, add vanilla essence and chopped nuts. Beat the egg and sugar until thick and lemon coloured, add dates and water mixture and fold in the flour mixture. Mix well together. Pour mixture into a greased pan and bake in a moderate oven until cooked through. Allow to cool and serve with cream.
