A selection of chicken and meat marinade recipes (01.12.16)

..IDEAL FOR THE HOLIDAYS.

Garlic chicken 
Marinate 1 chicken in:
1 tblspn red masala
1 tblspn crushed garlic
Dhana jeero
Arad
Salt
Black pepper
2 tblspn mayo
2 tblspn tomato sauce
2 tblspn tomato puree
2 tblspn steers chicken marinade
1 tblspn lemon juice
1 tblspn vinegar
Cook in butter
Garnish with greens
* I added a Tspn of extra garlic and some garlic flakes

Lemon and herb chicken 
Marinade:
Mayonnaise
Lemon juice enough for lemony taste
Aromat
Black/white pepper
Portuguese chicken spice
Green chilli paste
Dhania leaves
mixed herbs/any herbs u like
Salt if needed remember aromat n portugese spice is salty
Blend all together
Directions
Marinate chicken in this sauce. Can use fillet, whole chicken.
Can leave few hours or overnight always best.
Melt very little oil or butter of your choice in pot with some garlic. Add chicken pieces with very little of the sauce. Cook half done
Add in tray or Pyrex with leftover sauce n grill in oven until done or as soft as u like turning chicken once in between.
Note u can skip the pot n just add all to oven.
Serve with chips wedges or spicy/savory rice

T Bone Steak
2tbsp magic mix masala
2tsp steak & chops spice
1tsp BBQ spice
Steers Steak marinade
Peri Peri spice
3tbsp vinegar
Worcestershire sauce
3tbsp Red chillie sauce
¼ cup olive oil
Marinate T bone with the above

 

Baked- braai style lamb chops 
1 kg lamb chops (trim off fat and rinse thoroughly)
1-2 tsp garlic and ginger mix
1 onion sliced
5 medium tomatoes roughly chopped
1 tsp salt & pepper
3 whole chilies sliced in half
2-3 tsp SHISINYAMA spice
Dry spice (thyme, mixed herbs & parsley)
Soy sauce
Start by placing the lamb chops in a oven dish and sprinkling in salt and pepper. Next add garlic and ginger then sprinkle the shisinyama spice over meat follow with dry spices. Lastly add in sliced onion and tomatoes with chilies with few drops of soy sauce over the meat. Bake in oven for 45 min turning once after 30 minutes. Serve with a side of choice.

Grilled steak/chops

Ingredients
1 kg Tenderized steaks/T Bone/chops –
1 tsp Black Pepper –
1 tblsp Steak & Chop Spice –
1 tblsp BBQ Spice –
½ tsp Turmeric powder –
1 tsp Ginger/Garlic –
2 tblsps Lemon Juice –
1 tsp Aromat.

Method
Mix all ingredients together and marinate. Layer on griddle and grill with ½ cup water till well done. Pour sauce over.
Sauce
¼ cup BBQ Sauce – 3 tblsps tomato sauce – 4 tblsps Worcester Sauce – 4 tblsps Butter – Simmer together in pot – Serve with chips and onion rings.


Pepper steak
1 kg rump steak tenderized
1 tsp crushed black pepper
2 tsp ginger garlic
Green chillies 1 tsp Lemon pepper
1 tsp worstershire sauce
2 tbsp mayonnaise
2tblsp olive oil
1 tsp Robertson’s steak and chops spice, marinate above ingredients and cook on low heat till tender.
When half cooked add sliced onions n baby potatoes.
Sauce:
1 pkt knorr pepper steak sauce mix with
1/2 c water…add
1 cup fresh cream, 1 tblsp butter , 1 tsp garlic
When sauce thickens add to steak.
To serve layer steak in a Pyrex. Garnish with pepper rings and grill in oven for 10min

Serve sizzling..
