ROAST LEG / FILLET STEAK
Ingredients
1 cup tomato sauce
2 tsp green masala chillies
Salt &
freshly ground pepper to taste
1 tblsp Dhana
1 tblsp Jeeroo
Pinch saffron
Juice of 1 lemon
2 tblsp ginger garlic.
Mix all above ingredients together and then marinate the meat overnight. Cook in a POT until tender. Add more water if necessary until done. Use the sauce of the marinade to moisten the meat while cooking. Serve with corn, fried mushrooms and cubed fried potatoes, and garlic pita bread
Leg Roast
Make slits in the leg and stuff with whole garlic pieces,
Rosemary and green chillies
Marinate with
salt
black pepper
lemon pepper
coarse black pepper
green masala
lemon juice
Marinate over night n cook on low adding water so it cooks
Place in pot in oven @ 180 for an hour turning every 20mins basting with the juices n gravy
MUTTON LEG ROAST RECIPE
1 leg washed and drained
125g butter
1/4 cup fried onions crushed
¼ cup raw onions grated
½ tsp saffron
a little egg yellow colouring
1 ½ tsp crushed garlic
1 tblsp ginger garlic masala
1 tsp crushed green chillies
1 tblsp dhania powder
1 tsp jeero powder
1 tblsp crushed red chillies
1 tsp lemon pepper
½ tsp thyme – fresh or dry
juice of a lemon
salt to taste
any sauces of choice….. tomatoe sauce, machachos sauce, steers garlic sauce etc…
mix all the above ingredients together to make a paste.
pierce the leg mutton in many places, and marinate making sure the whole leg is covered with marination. allow to marinate overnight or longer, then cook on a low oven till done. serve with vegetables.
Bbq Rump Steak (Raeesa Meer)
Marinate steak in:
Ginger garlic
Gorimas steak and chops spice
Few tblsp spur BBQ basting
1 tblsp aminahs steak and chops marinade
Red chilies
Then heat butter and sear steak on both sides. Lower heat, add water and let steak cook on low till tender.
When it’s done, transfer steak with the sauces it cooked in to a oven dish, and top with slow cooked onions. Then bake in oven for 30 mins till heated through.
Onions:
One or two onions (depending on amount of steak)
Slice onions fine
Fry in a tblsp of butter and a tblsp of oil
Reduce heat and slow cook for about 20 mins till soft.
Remove from heat and sprinkle a little Worcester sauce. Mix
T BONE STEAK
1 kg T bone
1 ½ tblsp chilli garlic paste
1 tblsp red chillies
1 tblsp steak n chops spice
1 tblsp bbq spice
Quart cup olive oil
3 tblps vinegar
1 tsp lemon pepper
3 tblsp or more all gold tomato sauce
First braise steak on high to seal off juices then add masala n cook

Marinade :
1 tablespoon garlic
1 teaspoon ginger
1 teaspoon red masala
2 tablespoon Robertson BBQ spice
1 tablespoon steak and chops spice
1 teaspoon black pepper
1 teaspoon garlic and herb
1 teaspoon crushed red chillies
1 1⁄2 teaspoon dhana powder / crushes dhana
1⁄2 teaspoon whole jeera seeds
Salt to taste
1 tablespoon vinegar
1 tablespoon Worcester sauce
Sauce :
2 tablespoon steers peri
2 tablespoon tomato sauce
1 teaspoon mustard sauce
2 tubal steers garlic sauce
1 tablespoon steers BBQ sauce
1 teaspoon lemon juice
Method
Marinade leg over night for flavor or sink in with all the spices .
Add the leg into a pressure cooker with some water and give it 4 to 5 whistles ( if you don’t have a pressure cooker , cook in a large pot until soft and tender ) add water if necessary .
Do this 30 minutes before serving .
In a huge Pyrex dish add the cooked leg pouring all the sauce over the leg , add some blobs of butter and let in cook in a preheated oven until the sauce starts to simmer.
