RICE
3 cups rice..Bimri or Basmati
1 tsp whole jeero
3 tsp salt
3 tablespoon white vinegar
Boil about 6 to 8 cups water in a pot
Once it comes to boiling point add vinegar salt and whole jeero
Wash rice and add to boiling water boil for about 5 min then grate 2 to 3 carrots and add to rice and boil for another 5 to 10 minutes. Drain rice in colander and wash pot add a little oil to grease the pot .now add rice and add about 1 ½ cups water and allow to steam.Make a nice onion vagaar and throw over rice.
DHALL
2 cups oil dhal wash and put to boil .
Once boiled liquidise and keep aside .
Take half a chicken and about 3 chicken fillets wash and keep aside
Make a nice onion vagaar add oil ,whole jeero ,curry leaves , whole green chillies
Once vagaar is made put about 2 tab ginger garlic masala ,1tsp salt,1tsp dry dhana ,1tsp arad and 3tab methie masala braise well and add chicken and cook till nicely done
Then add about 3tomatoes chopped and cook further .
Then add your dhal which was liquidised to meat and let boil till nice and thick
Lastly make another vagaar with a little oil,whole jeero,few whole red chillies,sliced garlic let it get hot and throw over dhal and add green dhana , mint,and copped spring onions
Optional u can add dhodie or marrow to dhal very yummy
AALOO FRY .
Take 2 or 3 potatoes cut and cube add salt with pepper and garlic flakes .Make oil hot and add whole jeero Once oil is hot add potatoes and cook then put in oven to crisp
FRIKKADELS
500gram chicken or mutton mince:
To mince add 1 egg ,3 slices bread soaked in water and drained ,3 tab green masala 1grated onion water squeezed out ,1tsp salt 1 tab dry dhana 1tsp lemon pepper 1tsp white pepper,1tsp chicken spice .and lastly chopped greens.
Mix everything together.
Form into balls and flatten them slightly
Grease a oven pan with oil and put frikkadels on tray and bake in oven for about 20 minutes.
KATCHOOMER.
1 onion chopped fine, 1 tomatoe cubed fine and ½ cucumber chopped fine mix together add salt ,lemon juice ,chopped green dhania and 1 green chillie Enjoy
FISH FRIKKADEL
I tin middle cut tin fish..it has to be MIDDLE CUT..
Drain water from tin and put fish and water in a separate dishes..
Remove bones from fish..
In the fish add 2 beated eggs..
2 tsp crushed dhania
1 tsp fine jeero
Salt to taste
1 tsp black pepper
Green chilies to taste..
3 to 4 slices of bread ..that has been slightly soaked in water from the tin..
Cut up green dhania..
Mix everything together and make into round balls flatten and fry in shallow oil
N.B IF YOU FIND THE MIXTURE TO SOFT U CAN ADD MORE BREAD…
