Apple cream pie (18.06.07)

Ingredients

315ml Cake Flour
2.5ml Salt
2.5ml Ground Cinnamon
65ml Sugar
5ml Baking Powder
10ml Grated Lemon Rind
124ml Butter or Margarine
1 egg

Filling

2 Large Granny Smith Apples
2 eggs
12.5ml sugar
30ml Cake Flour sifted
10ml grated lemon rind
12.5ml fresh cream
1 x 250g carton cream cheese
15ml mixed peel (optional)
65ml raisins or sultanas
1ml salt

Method

1. Preheat oven to 180c and grease a fairly deep 30cm cake tin
2. Pastry : sift together dry ingredients add lemon rind and cut in butter or margarine using two knives
3. Add egg and mix well to form a smooth ball. Roll out pastry on floured surface.
4. Line base with pastry.
5. Filling: Peel and core apples cut into quarters then into thin slices.
6. Arrange in over lapping lines in pastry shell.
7. Beat eggs and sugar till thick.
8. Gradually add rest of ingredients for filling and mix well.
9. Pour mixture over apples and bake for 1 hour
10. Serve hot or cold and top with whipped cream sprinkle with cinnamon .
